Coconut Mini Egg Cookies

These Coconut Mini Egg Cookies are the perfect Easter Treat and my little ones love them! So hopefully yours will too!

You will need:

  • 1 cup Butter or Shortening
  • 1 cup Brown Sugar
  • 1 cup Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 1/2 cups Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups Rolled Oats
  • 1 cup Coconut
  • 1 cup Mini Eggs (I put the eggs in a plastic bag and smashed them with a rolling pin so they were small pieces)

Preheat your Oven to 375 Degrees

Getting Started:

  • Cream butter (or shortening) and sugars in mixer until light and fluffy.
  • Add eggs and vanilla and beat until combined
  • In a separate bowl combine dry ingredients
  • Add dry ingredients to wet ingredients and mix
  • Stir in oats, coconut, and mini eggs
  • Drop batter by spoonfuls on a baking sheet
  • Bake for 10 to 12 minutes or until golden brown
